ASSESSING AND EVALUATING THE MICROBIAL LOAD PRESENT IN COCONUT FRUIT

ABSTRACT/DESCRIPTION

The evaluation of the microbial load of coconut fruit was carried out using 4 samples of coconut fruit bought from ozoro main market. Different organisms were found in the coconut fruit samples which are Shigella spp, Klebsiella pnenmonia, Streptococuss pnenmonia, Staphylococuss aureus and Trichoderma spp. In table 2, Shigella spp was found in sample A,C and D but was not found in B while Klebsiella pnenmonia was found in A, but not in B,C and D. Also, Streptococuss pnenmonia was found in all the sample but more in sample C and D. And Staphylococuss aureus was found in all the samples, while Trichoderma spp was found in sample C and D but not in A and B. In table 3, a biochemical test was carried out on the organisms found in coconut fruit samples. Staphylococuss aureus tested positive to all the test carried out (Catalase, Indole, Urease, Citrate, Glucose, Latose and Motility). Shigella spp tested negative to Catalase, Indole, Urease, and Glucose. But positive to Citrate, Latose and Motility. Klebsiella pnenmonia also tested positive to Catalase, Urease, Glucose and Latose. But tested negative to Indole, Citrate and Motility. Streptococuss pnenmonia tested positive to Catalase, Indole, Citrate and Latose. But negative to Urease, Glucose and Motility. Trichoderma spp was tested negative to Catalase, Indole, and Glucose. But was tested negative Urease, Citrate, Latose and Motility. It is therefore recommended that large amount of coconut should not be taking because it might lead to increase in cholesterol due to its saturated fat content. But eating coconut flour is sate because it is been processed to remove fat.
