Nutmeg (Monodora myristica) belongs to myristiceal family is native to spice island near Indonesia and is used as spices in several parts of the world. It is mainly cultivated in penang island, Malaysia, southern and western Indonesia is the world leading producer of myristica fragrance, myristica fragrance has distinctive pigment, fragrance and a warm slight sweet taste. It is used as flavour in preparation or several foods. The table 4.1 result of plate court of antioxidant and anti-microbial analysis of nutmeg, plate 120 (code Nc1) and 110 (code N2) growth was scanty at EFU 1.2x102 and 1.1x102. The result of plate 300,380,350,400 and 330 (code Bc5, NC3, NCH, BC1 and BC2) respectively showed a growth of moderate at EFU 3.0x102, 3.5x102, 4.0x102, 3.2x102 and 3.8x102 also plate count of 500, code NC5 and BC4 growth were heavy at EFU 5.0x102. The table 4.2 result of colony observation of antioxidant and antimicrobial analysis of nutmeg of form (shape). Circular shows colony elevation as raised at code (BC1, BCH, BC5 and NC1) and BC1 surface appear smooth chill. Irregular from code BC2 and NC3 colony elevation were raised and surface of BC2 was dull while NC3 appear smooth. Irregular from code BC3, NCH, and NC5 colony were cover and their surface were dull, smooth, smooth respectively. It is hereby recommended that nutmeg are suitable for use by both skilled and unskilled personnel as it pose treat to the health of consumers. The general public should be enlightened on the content (antioxidant and antimicrobial) properties of nutmeg i.e is potential medicinal and health benefits of nutmeg.
