A catalase is one of the most important antioxidant enzymes. It is present in almost all aerobic organisms. Catalase breaks down two hydrogen peroxide molecules into one molecule of hydrogen peroxide molecules into one molecule of oxygen and two molecules of water in a two step reaction. Catalase has been characterized from many eukaryotic as well as prokaryotic organisms. Based on the differences in their sequences and structure, there are three different type of catalase. The monofunctional heme containing enzyme is the most widespread one. It os present in all aerobic organisms. The bifunctional catalase-peroxidase belongs to the second class, which is relatively less abundant in nature. Catalase is widely used for industrial purposes. Some of the basic process are; for the removal of hydrogen peroxide from milk before processing it into cheese, prevent food from oxidizing, in the textile industry, as a disinfectant to clean contact lenses. In conclusion, if the pH of catalase is changed, the change hinders the enzymes ability to breakdown hydrogen peroxide because it only works under very specific circumstances. It is hereby recommended that: food industries should integrate enzymes during food processing in order to achieve food quality, pharmaceutical industry should make use of enzymes during drugs production as it has the ability to treat various fatal and other infectious diseases including allergies, heart attack, and the last but not the least, textile industries should adopt the use of enzymes for ethanol production in order to break down starch and cellulose into fermentable sugars.
