THE PROXIMATE AND MINERAL COMPOSITION OF KALE (BRASSICA OLERACEA)
ABSTRACT/DESCRIPTION
From the results of this study, it is clear that kale (Brassica Oleraceae). Though a lesser known vegetable has enormous nutritional potential and thus can favourably be used as a substitute for most of the commonly used vegetables. Kale has been recognized as a good source of vegetable fiber which helps to reduce high cholesterol levels thus helping in the prevention of atherosclerosis. It can also help in keeping blood sugar levels under control and is an excellent vegetable for people with diabetes. The high protein content of kale confers on it advantage as a rich source of vegetables. Kale is also good source of carbohydrate and energy compared to other commonly known vegetable.
